Pepitas (“little seed of squash” from Mexican Spanish) are the edible seeds of pumpkins. The outside shell is removed to reveal the edible seed inside. In the Americas, pepitas have been eaten since at least the time of the Aztecs and probably much earlier. They are a good source of protein, the essential mineral iron, as well as zinc, manganese, magnesium, phosphorus, copper and potassium. They have been used to treat prostate ailments as well as anxiety disorders, due to their high content of L-tryptophan. We source our seeds from China. Pepitas are a popular ingredient in Mexican cuisine and are most commonly served as a snack on their own.
